In my early days I was always interested & even had connection with food, because my beloved aunties used to cook some awesome Maltese Traditional dishes and certainly without knowing they influenced me somehow. From then on at the age of 13 I used to be glued on TV watching this half Italian half Maltese chef cooking pastas, dips and pastes on a TV program just after I returned home from school. After I used to write all the recipes on a notepad, and later that day or in the weekends I secretly went in the kitchen and used to create those recipes I saw on TV. My secret to make the recipes was paying attention in detail on how the TV chef used to make the recipes.

I’ve spent over 10 years now in the Kitchen, starting as an apprentice chef during my spell in the Institute of Tourism Studies (I.T.S) at the 5star Corinthia San Gorg in Malta working under the guidance of Chef Stephen Hogan. I went to gain experience in Scotland, U.K where I worked in the Hilton Dunkeld House Hotel for a year under the reigns of Chef Ian Mc Donald & Chef Graham Singer. Internationally known Scotland Icons with a great reputation in their field. Working with these chefs I expanded my food knowledge, skills and techniques throughout that year. I was named the ‘Employee of the Month’ that year through the customer comments, Hotel Staff sociability and team work liability.

In 2003 I graduated after 4 years in the catering college.

Soon after graduating I took another course in Hotel and Restaurant Management to learn more about the management sector, while I was working in a Mediterranean Restaurant as the Pasta Chef in the busy touristic area of Sliema with the hotel chain Radisson SAS.

Then I had the opportunity to make another spell abroad, this time it was Spain. I spent 4 months working in Marbella in a family owned Hotel in the picturesque town of Ojen.

Back in Malta I went to spend 2 years working in the famous San Giuliano Restaurant in St.Julians. With over 30 years in operation this Fish Restaurant have taught me more mediterranean fish knowledge, working with Italian chefs.

After participating in some local competitons mainly in Butter Sculpture Competitions and Cook and Serve Competitions from which I won some medals, I had the opportunity I couldn’t refuse to become the Head Chef of ChiaroScuro, a Bistro in the capital city Valletta in one of the most famous streets named Strait Street.

With more interest in the online world I turned my enthusiasm and decided to focus more to work on my food website and created this blog. Together with other food related opportunities like interactive ‘How To’ video clips on my youtube channel and writing food recipes and articles, I started enjoying this new era. In a short time with the blog, I had the opportunity to feature in Gourmet Today Magazine and also I am contributing on the online newspaper MaltaToday.com.mt. I also write occasionally on Articles Submitters mainly Hubpages & World Village.

My main goals with this website is to get the people out there to interact with others. No matter what they do or where they come from… from Street cooks, Home cooks to Professional Cooks and everyone could share ideas, creations & sublime food related stuff. Reducing Obesity & Fighting Against Hunger are my two priorities.

Through these connections, I’ve made many friends online, and am endlessly grateful to all of them for their generous sharing. Thank you all!!
